There is a new shade of deep Salmon in this vintage that I truly love: we opted for a full skin-fermentation for a portion of this wine. The remainder was foot-tread by a beautiful wāhine-fest on harvest day. Giant heart-thanks to Jen, Jenn, Jill, June and Britt for helping bring the love into the grace-dance.
A long, slow, cool fermentation ensued. The finished wine aged sur lie in stainless before being bottled under an Aquarius moon on December 18, 2023: my dear Nana Grace’s sunsign.
TASTING NOTES: Nectarine blossom, satsuma, cassia.
Finishing pH 3.25– Alcohol: 12.1% abv.
